You and a mate spend a day at Sambrook's pilot kit in Wandsworth, working through the whole brewing process with experienced brewer John Hatch. This isn't a lecture. You're actually doing it: mashing, sparging, boiling, cooling. The kind of hands-on experience that makes you realise what goes into a proper pint.

Lunch is a pint in the taproom, and you walk away with a mini-keg of what you've made. It's offered year-round on specific days, so easy enough to fit around other plans. Worth doing if you're the type who likes getting properly involved in how things work, not just enjoying the finished product.
